Knife Skills
I learned a lot when I was in the lab last week. I would like to focus on four parts to write the report consisting of a cutting station, cutting position and holding a knife.Actually, I know some cutting skills before I go to the lab, but I would always cut my nail or drop the food from the cutting board. The shapes of food would never be the same, so I do not know how to cut them in a correct way. Many accidents would happen before I learn the knife skills.
The first step before cutting food is to prepare the cutting station. That is why we need to make sure that our cutting board will never move when we are doing some cutting on it. Putting a wet towel under the cutting board will guarantee the safety while we are cutting food. This skill helps me to know how to keep me safe and make my work efficient.
The second skill is how to hold a knife. Sometimes we do not mind what kind of food it is or how to cut the food when we are trying to use a big sharp knife to cut things. Accidents happen to us when we are not aware of the importance of holding a knife. First of all, we need to hold the knife correctly. The thumb and forefinger should rest in front of the bolster directly on the blade and this will keep balance when we are cutting food, especially some tough food, like carrot. It was really hard to cut carrot if I do not hold the knife correctly in the lab. I did not know how to use my strength when I used to hold the knife in my way and I almost cut my fingers.
We have known how to hold a knife. The next step is to keep a right cutting position. It is hard for beginners to keep a right cutting position all the time when they are concentrating on the food they have. They will cut their nails or fingers if they are not that careful. Accidents have nothing to do with the speed of knives, but the cutting position. We need always to place the food in a stable position and protect our fingertips by curling them inwards. Keep moving the knife back and forth or up and down will make it easier for us to cut food.
It is quite interesting to learn those skills because it gives me a new concept to know how to use the tools flexibly. We will be more skillful and safer when we know how to use those skills.
